Snow Candy like Laura’s

I’ve always wanted to try this recipe from The Little House Cookbook.  (Remember from Little House in the Big Woods when Ma helped Laura and Mary make this candy?)

Molasses-On-Snow Candy

For 3/4 lb. of candy you need:
Dark molasses, 1 cup
Brown Sugar, 1/2 cup

Fill pie pans full of clean snow and keep outside until time.
Combine molasses and brown sugar in saucepan (2 qt.) don’t use smaller as it will boil up.
Bring to a boil.  On medium heat cook, stirring frequently to prevent burning. 
After 5 minutes you can test using a drop in a glass of hot water to see when it forms a firm ball.
(I just use a candy thermometer and wait til it gets 245 degrees F. Remove from heat.  Pour into 2 small
heatproof pitchers (I didn’t have any so used my measuring cup, which didn’t work all that great.)
Fetch pans of snow and pour hot syrup onto cold surfaces.  When hardened break into bite sized pieces!

I was thinking it would taste like maple syrup candy, but it really doesn’t.  Sort of like a hard caramel, pretty good but sticks to your teeth! 🙂

I scored big at the market yesterday. Awesome yellow round zucchs, baby ‘tatos, turnips, beautiful green beans, garlic and onions. I am really enjoying having a farmer’s market that is closer to home and all organic!


I made stuffed squash out of the lovely globe zucchini’s. I didn’t realize they were zuch’s, thought they were some sort of yellow squash- delish!

Stuffed Squash

  • I used 4 yellow globe zucchini (steamed in the microwave for 8 minutes)
  • Cut off the tops and scoop out the insides and put in a bowl. I smashed these and drained a bit. Add to this all the below:
  • Cooked germinated brown rice (I LOVE DHC brand but trying to find a local source) which I also threw in some barley grains that I had about a 1/4 cup left
  • Sauteed chopped onions and garlic
  • Some cooked lentils (I used Massor Gota- think they are red, but might be orange. My new favorite lentils!)
  • A bit of tomato juice or sauce and salt and pepper to taste.
  • About 1/2 cup of grated parmesean cheese

Stuff the squash with this mix and bake at 350 for about 20 minutes or until it looks done!
Yummy!

Recipes and Planning…

I am a horrible menu planner. Could explain the recent increase in our credit card bills due to eating out a bit too much this past month… I am trying to do better. If I make a plan I tend to stick with it. My friend Alison is a fantastic cook and plans her meals in a neat planner she made. She also posts her weekly menu on her blog- and I thought maybe I could at least do that to keep me in line. (See the bottom of the blog for my menu this week.) I have been better about grocery bills- clipping major coupons and saving from $25 to $50 each visit. Making a list and sticking to it has been helping. I’ll keep you posted on my progress!

On a sad note, our little Choo Choo Train (Max’s hamster) died last night of a mysterious illness I couldn’t cure (and didn’t want to spend $300 at the vet for.) He had tumors that came up all over his body. The first time it happened I managed to keep him living awhile by spraying him with a medicated spray daily and wiping them with tea tree oil. He got his fur back and was doing well, then last week he got the tumors and lesions again and went blind overnight. I tried my previous remedies to no avail. So long, Choo Choo. We will miss you little furry one.

****Okay, I told Max about the hamster when I picked him up from school. He was sad and we came home to bury him. I started to pick him up and he moved! Crazy! He was BARELY alive and I bathed him again with hot water and tea tree oil, made a hot pack for him to sit on (he was so cold) and now he’s even opening his eyes! Call him the miracle hamster. I’m so glad I didn’t bury him!
